- 4 thick slices of a granary bloomer
- 2 tbsp brown crab meat
- 250g white crab meat
- 1 Kanzi® apple
- 1 red chilli finely diced
- The juice of 1 lime
- 4 tbsp low fat mayonnaise
- 2 spring onions finely chopped
- 1 tbsp coriander leaves
- Lightly toast the sour dough, then spread with a little brown crab meat.
- Finely dice the apple and place in a bowl with the crab meat, chilli, mayo and spring onions. Mix well and season.
- Top the toast with the crab mixture and scatter over the coriander leaves.
Serve with a wedge of lime.
